Mom's vegetable soup
one of our great memories is mom making vegetable soup. This is a recipe that is all about your taste and what you have on hand for veggies. You can be as creative as you want to be with it!
Ingredients
- water
- chopped carrots
- chopped onion
- chopped green pepper
- large dice potatoes
- green beans fresh or frozen
- corn frozen or fresh off cob
- cans of tomato soup
- ketchup
- salt and pepper for flavoring to you liking
- fresh tomatoes if you desire
- celery
- cauliflower if you don't have cabbage on hand
- fried hamburger
- instant minute rice
Instructions
- Fill pot with water to 3/4 full
- Add chopped carrots, celery, green pepper and onion. Cook until vegetables are half soft.
- Add large diced potatoes, green beans, corn and cabbage
- Cook until done.
- Add 2 cans tomato soup. Feel free to add more tomato soup if you want a stronger tomato flavor. Add some ketchup, salt, and pepper. Flavor to your liking
- Add rice and fried hamburger if you desire. cook until rice is tender.
- Serve
